Here is a delicious recipe for gluten-free nut cake. Easy to make, mellow, melting and slightly crunchy. Chopped nuts, eggs, butter, and sugar. Excellent for afternoon tea and breakfast.

In this recipe, wheat flour is simply replaced by finely chopped nuts.

And to give crunch to the cake, some of the nuts are coarsely chopped to leave small pieces.

This cake does not contain baking powder (or baking powder for Canadians).  This is not an oversight. It is well known, gluten-free flour cakes do not rise.

The egg whites are mounted in snow to give volume to the dough. This allows for a light cake, airy and more mellow.

If you are greedy, this nut cake goes perfectly with custard.

And why not a chocolate sauce?

A scoop of vanilla ice cream?

You can also make a chocolate icing, a ganache, buttercream.

The quantities given in the recipe below are suitable for about 8 people.

Ingredients

  • 6 eggs
  • 250 g 2 cups 500 ml walnut kernels (600g walnuts with shell)
  • 120 g ½ cup 125 ml of melted butter
  • 150 g ¾ cup powdered sugar
  • 1 pinch salt

Instructions

  1. Melt the butter in the microwave. Let it warm up.

  2. If it's not already done, break the nuts, chop them finely, but not too much, there must be some crunchy pieces.

  3. Break the eggs by separating the whites from the yolks.

  4. Oil or butter your mold.

  5. Preheat your oven to 180 ° C | 350 ° F.

  6. Beat the yolks with the sugar until the mixture whitens.

  7. Add the melted butter and continue beating.

  8. Stir in the walnut powder.

  9. Beat the egg whites with a pinch of salt and gently stir in the walnut mixture.

  10. Pour the dough into a previously buttered cake pan.

  11. Bake for 45 minutes in the oven. (Test with a toothpick to see if it's cooked in. Insert it in the center of the cake, if it comes out clean, the cake is ready).

  12. Let cool before unmolding. Good tasting!
