HOW TO MAKE BEEF NOODLES STROGANOFF?

Making beef noodles stroganoff is very simple and fast:

Basically, in a large pan or casserole with a little oil, you will sear your steak cut into thin strips and seasoned (salt and pepper).

You will remove your meat and you will reserve it in a bowl covered with a plate or aluminum foil.

Now, you are going to prepare the creamy sauce: you add butter in the pan and you make return a chopped onion. Then you add sliced mushrooms and make them come back for a few minutes.

To have a thick sauce, sprinkle flour or cornflour on the mushroom-onion mixture. Then you add pre-heated broth while mixing to avoid lumps. You will cook for a few minutes to thicken the sauce.

In the meantime, to save time, you will put water to boil and cook your egg noodles (it’s fast, 5 to 7 minutes after boiling water).

When the sauce is thick: add a little mustard and sour cream (sour cream). You mix and put your meat back in it and let it heat up.

You drain the noodles, add them to the sauce and mix.

WHAT TO REPLACE SOUR CREAM (OR SOUR CREAM)?

The original beef stroganoff recipe is made with sour cream. Quebecers call it sour cream and in Switzerland, it’s sour cream and sour cream in the US.

Sour because its taste is slightly acidic (because it contains lactic acid).

If you can not find sour cream in your supermarket, you can replace it with the same amount of thick natural yogurt (eg Greek yogurt), cream, fresh cheese.

Optionally, you can add a little lemon juice and/or vinegar to give a little tangy taste to cream, yogurt or cheese.

THE MUSHROOMS

Mushrooms are optional. Preferably fresh mushrooms. But you can also put canned mushrooms, or even dry mushrooms (which you would need to rehydrate before using them).

Ingredients

Beef stroganoff sauce:

  • 500 to 750 g beef steak (me 750g), cut into thin pieces about 5 cm x 0.60 cm
  • Salt and pepper
  • 2 tablespoons of vegetable oil
  • 3 tablespoons of butter
  • 1 large onion, chopped
  • 250g to 300g mushrooms cut into slices
  • 2 tablespoons flour to thicken the sauce (or cornflour for a gluten-free version)
  • 2 cups beef broth
  • ⅓ cup to ½ cup | 80 ml to 125 ml sour cream (or sour cream in Canada)

Pasta:

  • 300 g to 450 g egg noodles (depending on whether you want more or less sauce in your pasta)

To Serve:

  • Chopped parsley (or herbs of your choice), optional

Instructions

Preparation of ingredients:

  1. If you have not done so already, cut your steak into small pieces.

  2. Chop the onion.

  3. Cut your mushrooms into slices.

Grab the steak pieces:

  1. Heat a large skillet. Add 1 tablespoon of oil and cook half of your pieces of beef over high heat (30 seconds on each side). When the meat is golden, a crust forms and protects the juices inside. This is what gives a tender meat. Do not cook it for too long it could make your meat tough.

  2. Remove the pieces of beef, reserve them on a plate and cover with aluminum foil.

  3. Add the remaining oil to the pan and sear the other half of the beef in the same way. Once golden, add them on the plate.

Stroganoff sauce:

  1. Put the butter in the pan and add the onion. Make it back a few minutes to soften it. Add the mushrooms and cook, stirring occasionally. The mushrooms will release their juice.

  2. Sprinkle with flour (or cornflour for a gluten-free version). Mix well.

  3. Add broth two or three times while stirring to avoid lumps.

  4. Cook, stirring occasionally, to thicken the sauce.

  5. When you see that the sauce has thickened, add mustard and sour cream. Mix.

  6. Add the beef and heat without boiling.

Cooking noodles with eggs:

  1. Before the end of cooking your beef stroganoff, cook your noodles to save time.

  2. Bring a large amount of salt water to a boil.

  3. Add your noodles and cook for 5 to 7 minutes,

  4. Drain them.

To Serve:

  1. You can add the drained noodles directly into the stroganoff sauce, mix and let it heat up.

  2. The other way is to put noodles on top of each serving plate and over the beef stroganoff.

  3. Possibly, sprinkle with chopped parsley and enjoy!
